Bake Sweet Potatoes
Arrange sliced sweet potatoes in an even layer to a sheet pan. Drizzle with olive oil. Season with remaining ingredients. Start to cook Sweet Potatoes on the middle oven rack.

Assemble Cucumber Jicama Salad
Prepare ingredients. Combine in a medium bowl. Mix well.

Prep & Cook Shrimp
Season shrimp on a sheet pan. Once the sweet potatoes' first cook sequence is up, add the shrimp to the oven's top rack and start the next cook sequence, cooking both the potatoes & shrimp.

Add ingredients to a blender. Blend until smooth.
