Ingredient Prep
Preheat oven to 400 F. Prepare cauliflower on a sheet pan with oil & salt. Roast for 10 minutes. Prepare ingredients. Reserve a small quantity of scallion, red pepper & cilantro for garnish!

- 2 Tbsp Extra Virgin Olive Oil
- 1 tsp Kosher Salt
- 1/4 cup , sliced Scallions
- 1/2 cup , sliced Red Seedless Grapes
- 1/4 cup , chopped Fresh Cilantro Leaf
- 1 , sliced Fresno Pepper

Salad Assembly
Combine mayo, sour cream & curry powder in a large bowl, mix well. Add remaining ingredients to sour cream mixture.

- 1/4 cup Full Fat Mayonnaise
- 1 Tbsp Curry Powder
- 1/4 cup , sliced Scallions
- 1/2 cup , sliced Red Seedless Grapes

- 1 Tbsp Lemon Juice
- 1 , sliced Fresno Pepper
- 1/4 cup Almond Slivers

Taste
Plate the salad in a bowl or platter. Garnish with cilantro, chilis & scallions. Season with black pepper.
