Preparation

  1. Ingredient Prep

    Preheat oven to 350F. Prepare ingredients & combine fruit in a large bowl. Toss diced bread in canola oil & salt. Toast in oven for 7 minutes.

    • 3 , sliced Fresh Green Kiwifruit
    • 1/2 , sliced American Cantaloupe
    • 1 cup , sliced bias English Cucumber
    • 1 cup Blueberries
    • 2 cups , crust removed, diced Sourdough Bread
    • 2 tsp Canola Oil
    • 1 pinch Kosher Salt
  2. Salad Assembly

    Season fruit salad. Mix well.

    • 1/2 cup , leaves picked Mint
    • 1 tsp Kosher Salt
    • 1/4 cup Extra Virgin Olive Oil
    • 1 , zested & juiced Lemon
  3. Taste

    Plate on platter or bowl. Garnish with homemade croutons & mint!
