Preheat oven to 350F. Prepare ingredients & combine fruit in a large bowl. Toss diced bread in canola oil & salt. Toast in oven for 7 minutes.

- 1 cup , sliced bias English Cucumber
- 1 cup Blueberries
- 2 cups , crust removed, diced Sourdough Bread
- 2 tsp Canola Oil
- 1 pinch Kosher Salt

Season fruit salad. Mix well.
- 1/2 cup , leaves picked Mint
- 1 tsp Kosher Salt
- 1/4 cup Extra Virgin Olive Oil
- 1 , zested & juiced Lemon
