Preparation

Prep Salmon
Season salmon on sheet pan. Leave room for zucchini!
- 1 1/2 lb Wild Atlantic Salmon
- 1 Tbsp Extra Virgin Olive Oil
- 1 tsp Kosher Salt

Cook Salmon & Zucchini
Prepare ingredients. Season zucchini & add to sheet pan. Place on top oven rack.
- 2 , sliced into circles Zucchini
- 0.5 oz , leaves removed Garden Fresh Thyme
- 1 , minced Garlic Clove
- 1 Tbsp Extra Virgin Olive Oil
- 1 tsp Kosher Salt

Tzatziki Creation
Prepare ingredients. Combine all ingredients in a medium bowl. Mix well. Set aside in fridge.
- 1/2 cup Plain Greek Yogurt
- 1 , juiced Lemon
- 1 cup , small dice Persian Cucumber
- 1/4 cup , finely chopped Mint
- 1/3 cup , finely chopped Italian Parsley
- 1 , minced Garlic Clove
- 1/2 tsp Kosher Salt
- 1 Tbsp Extra Virgin Olive Oil

Couscous Creation
Add water, thyme sprigs, garlic, and salt into a pot. Bring to a boil and add stir in couscous. Turn off heat & cover. Let steam for 5 minutes. Remove thyme & garlic. Season with olive oil & salt. Fluff with a fork.

Serve & Enjoy!
Top salmon with Tzatziki. Serve with zucchini & couscous.
