Preparation

Season & Cook Tri Tip
Season beef on sheet pan. Place the tri-tip on the middle oven rack. Start to cook Tri-Tip.
- 2 1/4 lb Beef Tri-Tip Roast
- 1 Tbsp Olive Oil
- 1 tsp Kosher Salt
- 1 pinch Black Pepper

Prep Mashed Potatoes
Prepare potatoes. Place potatoes into a large pot, cover with water, season with salt, and bring to a boil. Reduce heat to medium-high, and cook potatoes for 20 mins.
- 1 1/2 lb , quartered Baby Yukon Gold Potatoes
- 6 cups Water
- 2 tsp Kosher Salt

Cook Green Beans
Trim green beans and arrange on a baking tray. Drizzle green beans with olive oil and season. Once the tri-tip's first cook sequence is up, place the green beans on a rack below the tri-tip and start the next cook sequence.
- 1 pinch Black Pepper
- 1 tsp Kosher Salt
- 1 Tbsp , extra virgin Olive Oil
- 1 lb , trimmed Green Beans

Season & Mash Potatoes
Strain potatoes in sink. Place back in same pot. Mash all ingredients together. Cover to keep warm.
- 4 , minced Garlic Cloves
- 1 Tbsp Unsalted Butter
- 1 cup Heavy Cream
- 2 Tbsp Fresh Horseradish

Sauce Creation
Heat Maple Onion sauce on medium low. Add ingredients and cook for 5 minutes stirring occasionally. Remove from heat and set aside.
- 1 cup Onion and Maple Confit
- 1/4 bunch , leaves removed Garden Fresh Thyme
- 2 , minced Garlic Cloves

Serve & Enjoy!
Let tri-tip rest then slice into 1/4" thick slices and top with onion maple sauce. Serve with green beans & horseradish mashed potatoes.
