Ingredient Prep
Preheat oven to 175 C. Prepare ingredients. Toss sweet potato in salt & oil. Roast for 15 minutes.
- 910 g , medium diced Sweet Potato
- 2 Tbsp Salt
- 2 Tbsp Extra Virgin Olive Oil
- 1 , segmented Orange
- 1 tsp , ground Black Pepper

Flavour Creation
Combine ingredients in a medium bowl. Mix well.
- 1 Tbsp Salt
- 120 ml Extra Virgin Olive Oil
- 40 g Roasted Pine Nuts
- 20 g Dried Cranberries
- 60 ml Orange Juice
- 4 Tbsp Cider Vinegar
- 1 tsp , ground Black Pepper

Taste
Plate potatoes on a platter or bowl. Top with orange segments and pine nut mixture. Garnish with goat's cheese, more pine nuts if desired & sage leaves.
