Preparation

  1. Ingredient Prep

    Preheat oven to 350 F. Prepare ingredients. Toss sweet potato in salt & oil. Roast for 15 minutes.

    • 2 lb , medium diced Sweet Potatoes
    • 2 Tbsp Kosher Salt
    • 2 Tbsp Extra Virgin Olive Oil
    • 1 , segmented Orange
    • 1 tsp , ground Black Pepper
  2. Flavor Creation

    Combine ingredients in a medium bowl. Mix well.

    • 1 Tbsp Kosher Salt
    • 1/2 cup Extra Virgin Olive Oil
    • 1/3 cup Roasted Pine Nuts
    • 1/2 cup Dried Cranberries
    • 1/4 cup Orange Juice
    • 1/4 cup Apple Cider Vinegar
    • 1 tsp , ground Black Pepper
  3. Taste

    Plate potatoes on a platter or bowl. Top with orange segments and pine nut mixture. Garnish with goat cheese, more pine nuts if desired & sage leaves.

    • 1/2 cup , crumbled Soft Goat Cheese
    • 3/8 cup Fresh Sage Leaves
