Preparation

Cook Quinoa
Bring ingredients to a boil. Reduce heat, cover and simmer for 15 minutes. Remove from heat & let stand 5 minutes. Remove from pot & cool.

Ingredient Prep
Cut the cucumber, tomato and parsley.
- 1 cup , diced Red Tomato
- 1 cup , diced English Cucumber
- 1/2 cup , chopped Italian Parsley

Salad Assembly
Combine all salad ingredients in a large bowl. Mix well.
