Preparation

Cook Rice
In a medium saucepan, bring water, and salt to a boil. Add rice, and reduce heat to low in order to maintain a steady simmer. Cook covered until the rice is tender and the kernels pop open. Strain cooked rice and run it under cold water to cool it down.

Prepare ingredients. Reserve celery leaves for garnish!
- 1 cup , sliced on bias Celery
- 2/3 cup , roasted, chopped Walnuts
- 2/3 cup , sliced Red Seedless Grapes
- 1/2 cup Celery Leaves
- 1 , triangle slice Fresh Pink Lady Apple

Salad Assembly
Add rice and chopped ingredients to a large bowl. Add olive oil, lemon juice and season with salt and pepper. Mix well.
- 1/2 tsp Kosher Salt
- 1/2 , juiced Lemon
- 1 1/2 Tbsp Extra Virgin Olive Oil
- 1 pinch Black Pepper

Plate in platter or large bowl. Garnish with celery leaves.
