Prepare Vegetables
Prepare vegetables.
- 2 , julienned Fresh Shallots
- 1/2 , julienned Fennel Bulb
- 1 , halved Thai Chili Pepper

Create Tomato Jam
Heat oil in a skillet over medium-high heat. Sauté shallot, fennel and chili for 1 minute. Add rest of ingredients, stir and let simmer for 15 minutes or until thickened.

- 2 cups Red Cherry Tomatoes
- 1/4 cup Red Wine Vinegar
- 2 Tbsp Granulated Sugar
- 1 Tbsp Smoked Paprika
- 1 tsp Kosher Salt

Create Crostinis
Slice baguette. Arrange baguette slices on a sheet pan, drizzle evenly with oil and season with salt. Bake for 10 minutes or until golden brown and crispy.

Season & Bake Brie
Oil a cast iron skillet, pan or baking sheet. Place brie in skillet and season with oil, salt and pepper. Bake for 15 minutes.
- 1 , small wheel Brie Cheese
- 1 Tbsp Extra Virgin Olive Oil
- 1/2 tsp Kosher Salt
- 1/4 tsp Black Pepper

Top brie with jam and garnish with parsley and bay leaves. Serve with crostinis.
