Preparation

Cook Wheat Berries
Bring wheat berries, salt & water to a boil. Simmer for 40 to 45 minutes. Once cooked, drain and rinse wheat berries under cool running water.

Prepare ingredients.
- 1 , sliced Anjou Pear
- 1/4 , julienned Red Onion

Salad Assembly
Combine ingredients in a large bowl. Mix well.
- 1 cup Wheat berries
- 1 tsp Kosher Salt
- 2 cups Fresh Arugula
- 1 , sliced Anjou Pear
- 1/4 , julienned Red Onion
- 1/4 cup Olive Oil
- 1 , zested & juiced Lemon
- 1 pinch Black Pepper

Plate the salad into a bowl or on a plate and garnish with the blue cheese on top.
