  • Wheat berries 1 cup

Preparation

  1. Cook Wheat Berries

    Bring wheat berries, salt & water to a boil. Simmer for 40 to 45 minutes. Once cooked, drain and rinse wheat berries under cool running water.

    • 1 cup Wheat berries
    • 3 cups Water
    • 1 tsp Kosher Salt
  2. Ingredient Prep

    Prepare ingredients.

    • 1 , sliced Anjou Pear
    • 1/4 , julienned Red Onion
  3. Salad Assembly

    Combine ingredients in a large bowl. Mix well.

    • 1 cup Wheat berries
    • 1 tsp Kosher Salt
    • 2 cups Fresh Arugula
    • 1 , sliced Anjou Pear
    • 1/4 , julienned Red Onion
    • 1/4 cup Olive Oil
    • 1 , zested & juiced Lemon
    • 1 pinch Black Pepper
  4. Taste

    Plate the salad into a bowl or on a plate and garnish with the blue cheese on top.

    • 1/2 cup , crumbled Danish Blue Cheese
