Preparation

Whisk Dressing
Whisk together mustard, honey, balsamic, in a bowl. Gradually, add oil to emulsify. Add lemon zest/juice. Season.

- 1/2 Tbsp Honey
- 1/4 cup Olive Oil
- 1 pinch Kosher Salt
- 1 pinch Black Pepper
- 1/4 , zested + juiced Lemon

Flavor Chickpeas
Add all ingredients to a small bowl. Toss to coat.
- 1 can , drained Drained Canned Chickpeas
- 1/2 , zested + juiced Lemon
- 1 Tbsp Olive Oil
- 1 tsp Kosher Salt
- 1 pinch Black Pepper

Combine Herbs & Feta
Add all ingredients to a small bowl. Toss to coat.
- 1/2 lb , crumbled Feta Cheese
- 1/2 bunch , leaves, hand torn Oregano
- drizzle Olive Oil
- 1 Tbsp Red Wine Vinegar
- 1 pinch Black Pepper

Slice Cucumber
Prepare cucumber.
- 1 , pencil cut English Cucumber

Wash greens & dry.
- 4 cups Spring Mix

Sear Chicken
Set pan over high heat for 2 minutes. Add olive oil & sliced chicken. Cook for 6 minutes until golden brown, seasoning halfway through.
