Preparation

  1. Ingredient Prep

    Prepare ingredients. Set aside some cilantro for garnish.

    • 1 , diced Mango
    • 1/2 cup , chopped Fresh Cilantro Leaf
    • 1/2 cup , julliene Red Onions
    • 1/2 cup , wedged Red Tomato
  2. Combine and Mix

    Combine salad ingredients in a large bowl. Mix well.

    • 2 cans , drained Canned Black Beans
    • 1 , diced Mango
    • 1/2 cup , chopped Fresh Cilantro Leaf
    • 1/2 cup , julliene Red Onions
    • 1/2 cup , wedged Red Tomato
    • 2 Tbsp Lime Juice
    • 1 Tbsp Kosher Salt
    • 1 tsp Ground Cumin
    • 1/4 cup Extra Virgin Olive Oil
  3. Taste

    Plate on a platter or in a bowl. Top with cotija & cilantro.

    • 1/2 cup , crumbled Cotija Cheese
    • 1/4 cup , leaves only, hand-torn Fresh Cilantro Leaf
