Preparation

Make Batter
Add all dry ingredients into a large bowl. Add the cream and mix well until combined.

- 1 Tbsp Granulated Sugar
- 2 tsp Baking Powder
- 1 tsp Iodized Salt
- 1 1/2 cups Cream

Build The Filling
Slice peaches, removing and discarding the pit. Add slices to a large bowl. Add all dry ingredients to peaches. Add vanilla, zest & lemon juice to peaches. Mix gently to coat the fruit. Add to a baking dish.

- 3/4 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 2 1/2 Tbsp Tapioca Starch
- 1 pinch Ground Cinnamon
- 2 tsp Iodized Salt
- 1/2 Tbsp Vanilla Extract
- 1/2 , zested, juiced Lemon

Assemble & Bake Cobbler
Spoon batter over fruit filling. Bake at 375F for 40 - 45 minutes.

Make Meringue
Bring water to a boil in a small pot. Place a heat proof bowl that fits inside pot, but does not touch water, over the pot. In the bowl, mix your sugar, salt and egg whites together until combined. Heat gently and stir occasionally. After 6 minutes, check to see if you can feel sugar granules between your fingers. If yes, keep cooking until all granules have melted; if not, pull off of the heat and place into the mixer with the whisk attachment. Whisk mixture on high speed, adding cream of tartar halfway through, until stiff peaks form. Option: Place into a piping bag for serving.

Serve
Spoon or pipe meringue on top of portion. Using a blow torch, gently caramelize the meringue. Decorate with powdered sugar if desired. Enjoy!
