Preparation

Prepare Potatoes & Onions
Prepare potatoes and onions.
- 2 , peeled, diced Russet Potatoes
- 1 , chopped Yellow Onion

Cook Potatoes & Onion
Place potatoes and onions in a pot with rest of the ingredients. Bring to a boil and let simmer over medium-low heat for 20 minutes or until potatoes are fork tender.
- 2 cups Chicken Stock
- 1 1/2 cups Heavy Cream
- 6 , peeled Garlic Cloves
- 1 Tbsp Kosher Salt

Cook Meat
Brown sausage (removed from casings) in a skillet over medium-high heat for 5 minutes or until sausage is browned and crisp.
- 1 lb Chorizo Sausage

Create Dip
Add potato and onion mixture to blender and blend until smooth. Add rest of the ingredients and blend until well incorporated.
- 1/2 lb , shredded Monterey Jack Cheese
- 1 Tbsp Chili Powder
- 1 tsp , or to taste Kosher Salt

Say Cheese
Spoon dip into a bowl and top with chorizo, cheese and green onions. Garnish with olive oil if desired. Serve with crostini or your favorite chips. It's going to be gouda!
